As we march towards the end of 2012 - our first year in full production - we have a cracker to finish off.

One of Bury St Edmunds' most delightful secrets is the Old Canon Brewery. You must check it out - it will become an instant favourite. We've made a malt spirit with them from their superb Gunner's Daughter. Drop by and have a sip!

A civilised start to the morning

At Stonham Barns today. Lovely coffee shop. Tea and sausage sandwich for £4.50. Very good. Winter sun is brilliant. Sky blue and it is minus three.

We are also at the spectacular Bur well market this afternoon and so is Santa.

Stonham Barns

It has been another incredibly busy week. We have been making two different eau de vie, superb whiskey for Frog Island Brewery, Chodka, Christmas Spirit and the usual delights.

This weekend you can come and sample our delicious spirits at Stonham Barns, Creake Abbey, Summerhill Farm Shop and Center PARC's at Elveden.

Next week we are focusing on whiskey!

Lavenham farmers market

I think we may have chosen wisely today. It has been blowing a take with us all night long and whilst the skies are bluing at the moment, the wind is still having a firm go.

We are at Lavenham farmers market in the village hall today and it has won Best Suffolk farmers market 2012! So well worth a visit!

A cool but blue sky morning. All the stands look great here today. I think we will be very tempted!

English Spirit infused with bay leaves? Yes! Warm, notes of white pepper, hints of Angelica and more. Simply take from the fridge, pour into a chilled glass and add an olive or capers and sip. Lovely.

Christmas Spirit Mince Pies

I love a mince pie (or many) and the quintessential Christmas Pud.

The love of the above compelled the creation of our Christmas Spirit.

We make our Christmas Spirit from our Old Salt Rum; infuse it with raisins, sultanas, peels, fresh zests, vanilla and a secret combination of zests. Leave time do its best and there she is: too attractive to avoid.

We filter the spirit from the bits. The bits I used to make our minces and pud. Have to wait for Christmas for the pud, but our early minces... well blow me down...

Imagine lovely fruit that has had months in mouth tingling rum and a short crust pastry to add richness and polarity. That to one side they are delish. Not selling them this year, but you never know for the next!

Catch up

It has been an oh so busy time for us.

In the last month we have pressed on with the first tender steps into whiskey production (email us for information).

We have also made so super apple brandy and done an awful lot of shows, so forgive the silence.

Its been a busy week

Whiskey on its way...

Some of the things we have been up to this week have included making single malt for Panther Breweries up in Norfolk. One more distillation and all will be ready come late on Tuesday.

A tough year for English Wineries

Most vineyards around the country are well down on their yields this year; along with reduced sugar content, higher acidity and a sooner harvest of rape failing to distract the damn pigeons. Thankfully when there is any harvest there is always pomace to be had. We were lucky enough to grab some of Chilford Wines' and that is currently fermenting away great guns. A big thanks to Fiona and Glen. More news to follow.

A large quantity of carrots arrived

Carrot brandy anyone? Into the grinder come Monday. Hope the juice is good for the skin as our grinder is a toosh... disseminating!

Fermenting molasses

Rum is lovely stuff. Our yeast blasts through its sugary bits on no time.

Raspberry infusions

It is always thought provoking to reflect upon the delight of our raspberry spirit. The spirit wicks out the magenta colour of the fruit, its elegant perfumey aromas, sweet complex fruit sugars and cleansing acidity. What's left in the fruit afterwards? Not much!

Colombian Coffee Beans are oh so good!

As any one who has tried our Columbian Coffee Bean will know, it tastes just like great coffee smells. It took a good long while to develop and it was always a visual delight to see those sable gems slicked with aromatic spirit.
